Eggs Florentine w/healthy hollandaise sauce
Combine 2 tablespoons of mayonnaise with 1 tsp. of dijon mustard (or 1/4 tsp. lemon zest), herbs like one or two tsp. of chopped chives or parsley and black pepper for hollandaise. Toast muffins and add spinich, possibly softened for two minutes, then a poached egg and then the hollandaise.
