Step 1
1. Line a large baking sheet with parchment paper.
Step 2
2. In a medium bowl, whisk together the almond flour, coconut flour, baking powder/soda, cream of tartar, and salt. If you have a sifter, you can sift it instead of whisking.

3. In a large bowl, beat the butter with the powdered erythritol until well combined. Fold in the extract. Then fold the butter mixture into the dry ingredients.

4. Beat the egg white with the cream of tartar until peaked (you want the egg whites to firm up a bit and be “puffy”). and extract.
Step 5
5. Then gently fold the egg whites into the almond flour mixture until the dough comes together.
Step 6
6. Now Preheat the oven to 325F. Preheating now gives your dough time to absorb the liquid a bit before making it to the oven. Don’t chill the dough.

7. Gently FOLD in the chocolate chips.
Step 8
8. Roll the dough balls and place on the parchment lined baking sheet. For the full-sized cookies do no more than 6 to a baking pan. For the small ones you can do 9.

9. Bake 12-15 minutes, until just barely golden on top. Remove and let cool on the pan.
