Instructions

Step 1
1) Pat chicken dry and season with 1 tbsp olive oil, 1 tsp kosher salt and ¼ tsp ground black pepper. Divide chicken between 2 greased Suvie roasting racks (handles facing up) set within two Suvie pans. Place pans in Suvie, input settings and cook now. Suvie Cook Settings Bottom Zone: Roast at 400°F for 12 minutes* Top Zone: Roast at 400°F for 12 minutes*

Step 2
2) Meanwhile, in a small bowl, stir together ¼ cup apricot preserves, 1 tsp lemon zest, and 1 tsp fresh thyme leaves. Microwave on high until runny, about 30 seconds. Set aside.

Step 3
3) Once the chicken has roasted, remove the pan from Suvie, flip chicken over, and brush with reserved apricot glaze. Return pans to Suvie, input settings and cook now. Suvie Cook Settings Bottom Zone: Roast at 400°F for 15 minutes Top Zone: Roast at 400°F for 15 minutes
Step 4
4) Remove pan from Suvie, set chicken aside to rest for 4 minutes, then slice against the grain into pieces and serve.
