Instructions
Step 1
Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper or a baking mat.
Step 2
In a large bowl, whisk together flours, sugar, baking powder, cinnamon, nutmeg, ginger, and salt. Cut in butter with a pastry blender until mixture resembles coarse crumbs.
Step 3
In a small bowl, whisk together egg and milk. Add to flour mixture and stir to combine. Stir in pumpkin puree until just combined.
Step 4
Drop by 1/4 cup-full (or heaping tablespoon full) onto prepared baking sheet.
Step 5
Bake for 14-19 minutes, or until bottoms are golden brown and center is set. Remove to a wire rack to cool. (If making small fritters, check the doneness at 12 minutes.)
Step 6
While fritters are cooling, prepare glaze. Whisk together confectioner's sugar, vanilla extract, and 1 tablespoon milk until smooth. Add up to an additional tablespoon milk to reach desired consistency.
