Instructions

Preheat oven to 350 degrees Fahrenheit

Sift together 1 cup of flour, 1 1/2 tsp of baking powder and 1/4 tsp of salt and set aside.

Separate egg yolks and egg whites into two bowls. Set the egg whites aside.

Mix egg yolks and 2/3 cups of sugar with a mixer starting at low speed and slowly working up to high speed. Mix for at least 2 to 3 minutes until yolks are pale yellow and sugar is combined.

Add vanilla and 1/4 cup milk. Mix again for 2 to 3 minutes still everything is combined. Scrape the sides of the bowl and make sure everything is mixed in. Mixing again if needed.

Add in flour mixture in 3 to 4 additions. Mix in a gentle motion with a whisk. Just mixing until flour is combined. Don't over mix. Set aside.

Add egg whites and 1/3 cup of sugar to a clean bowl and beat with a mixer. Start on low speed and slowly work up to high speed. This may take a while. Be patient. The egg whites need to be at the soft peak stage. This means white and glossy. When you lift up the beater you should see a stiff peak.

Now begin adding the egg whites. You will need to carefully fold the egg whites into the batter in a few additions. Take your time and fold carefully with a spatula. You want to keep the batter fluffy.

After the egg whites are fully incorporated you will spread the batter in a 13x9 inch baking dish. Don't grease the sides of the pan. This will cause the cake to shrink. You only need to lightly butter the bottom of the dish.

Bake the cake on the middle oven rack on 350 degrees Fahrenheit for 25 to 35 mins. This will depend on your own oven.

Cake is done when it's lightly brown and toothpick or a fork inserted in the center comes out clean.

Allow the cake to cool for 30 to 45 mins. You will then poke the cake with a fork or a wooden skewer all over the cake. Then take a knife and run it carefully around the sides of the cake to loosen from the pan. This will allow the syrup to soak in.

Mix together all the syrup ingredients with a whisk. Make sure it is fully combined.

First, pour the syrup evenly around the sides of the cake. These are the areas that need the most syrup. Lastly you will pour the remaining syrup over the rest of the cake and the middle.
Step 15
To make the whipped cream topping you need to mix the cold heavy whipping cream and sugar together with a mixer starting at low speed and gradually raising it to high speed. Whip until thick. Spread the whipped cream over the cake and smooth out flat and level. Cut cake into portions and garnish each piece with strawberries. Refrigerate cake for at least a few hours for the syrup to absorb into cake or overnight. You can also make the cake and add the syrup the day before and then add the whipped cream and strawberries right before eating. Either way works. Cake must stay refrigerated.
