3boneless skinless chicken thighs
cut into 1 inch cubes

3apples
pealed, cored, and cut into 1/2 in cubes

3 clovesgarlic
finely chopped

2shallots
finely chopped

½ teaspoonground black pepper

1 ½ teaspoonsground ginger

¾ teaspoonsground cinnamon

¾ teaspoonsground nutmeg

2 tablespoonssea salt

2 tablespoonspure maple syrup
Instructions
Step 1
Mix ingredients together well in a large stainless steel bowl. Cover with plastic wrap and place in refrigerator overnight ( if cooking same day, freezer for 20-30 minutes, to cool but not to freeze the meat)
Step 2
Assemble the meat grinder fitted with the coarse plate. Grind all ingredients into a bowl.
Step 3
You can form into patties or make sausage links.
