Instructions
Step 1
Spiraling potatoes or slice potatoes into french fries, and place into cold water and lemon so they won't turn brown while you prepare the oil.
Step 2
Boil in vinegar for 10 mins. Then let the fries sit on a paper towel and dry.
Step 3
Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic, onion, pepper and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
Step 4
Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet or deep-fryer one at a time, or they will clump together.
Step 5
Fry first batch for 50 seconds and then remove from oil and let dry.
Step 6
Then fry them again until golden brown and crispy. Remove and drain on paper towels.
