Is there anything more delicious combo than cheese and onion. Absolutely not when it’s pouring out this Greggs style Cheese and onion puff pastry with hidden ingredient ‘potato’.

Instructions
Step 1
Boil the potatoes. Peel the medium size potatoes, cut in half and add in water. (simmer for 20/25 minutes for perfect boiled potatoes).
Step 2
Finely chopped the onions. Add butter in a pan and cook on low heat until just become translucent.
Step 3
Remove from heat and set aside.
Step 4
Once potatoes are boiled. Let's make filling. While potatoes are still hot, start mashing. You can use fork or potato masher but I prefer stand mixer. Add cheese and mix it well until you notice it starts melting. (You can use only cheddar cheese but I use red leister and mature cheddar for bit of colour).
Step 5
Add cream cheese and saute onions and mix it well. Don't forget to scrape the bottom
Step 6
In the last add, milk, butter, white pepper and dijon mustard. Give it a last mix. Cover and set aside for atleast an hour or 2 until filling is completely cool down.
Step 7
Take a puff pastry, cut in 4" square, add filling around 1 tbsp. Smooth it out into square. Place another puff pastry part on top and seal with fork.
Step 8
Make some cuts in top. Egg wash it and transfer to baking tray. Added sesame seeds but totally optional.
Step 9
Bake in preheated oven for 25/30 minutes at 180c until gold brown on top. Take out and serve immediately.
