These blini are a great appetizer and everyone always asks me for the recipe when I make them ! They are easy to make and so delicious

Instructions
Step 1
Wash and cook potatoes in boiling water with a peeled chopped small beetroot until fork tender

Step 2
Peel the potato then Push through a sieve while hot or with a ricer then add 1/3 cup of the sour cream salt and black pepper to taste
Step 3
Blend the cooked beet root with two eggs using a stab mixer then stir that into the mix with the buckwheat flour and baking soda ! The mixture should be a bit runny if it isn’t add a little butter milk or milk then whisk to loosen the batter

Step 4
Put the batter into a squeeze bottle then lightl brush a non stick pan with oil . Squeeze out little circles of the batter cook on medium heat . When you see little bubbles forming flip over and cook 30 more seconds . Set the blini aside to cool
Step 5
Serve each blini with a little bit of sour cream on top a little bit of caviar and a little sprig of dill and enjoy
