Ingredients

2 tablespoonsolive oil
⅔ cupshallots
minced
½ cupscallions
thinly sliced, both white and light green parts
1 teaspoongarlic
finely minced
1 teaspoonsalt
½ teaspoonfreshly ground black pepper
½ teaspoondried oregano
rosemary, or thyme
2 tablespoonsworcestershire sauce
2 tablespoonstomato paste
1 tablespoondijon mustard
2eggs
large
½ cupmilk
2.5 poundsground turkey
¾ cuppanko
½ cupParmesan cheese
finely freshly grated
½ cupfresh flat-leaf parsley
minced
½ cupketchup
Instructions
Step 1
Preheat the oven to 350°F.
Step 2
Heat the olive oil in a medium-size skillet over medium heat and add the shallots.
Step 3
Cook, stirring frequently, until tender, about 5 minutes; try not to let them get too brown.
Step 4
Add the scallions and garlic and cook until you can smell the garlic, about 2 minutes.
Step 5
Add the salt, pepper, oregano, Worcestershire sauce, tomato paste, and mustard and mix well.
Step 6
Let the mixture cool slightly.
Step 7
Place the eggs and milk in a large bowl and beat to mix.
Step 8
Add the turkey, panko, cooled shallot mixture, Parmesan, and parsley.
Step 9
Mix well (use your hands!) and shape into a rectangular loaf on the prepared baking sheet, making sure there is space on all sides of the meat loaf.
Step 10
Spread the ketchup over the meat loaf.
Step 11
Bake the meat loaf until cooked through, 60 to 65 minutes.
Step 12
Let it sit for at least 10 minutes, then slice and serve.
