Sea-Salt Ice Cream

With the 20th anniversary of Kingdom Hearts being this year I wanted to find a way to celebrate one of my favorite game franchises. I tried making this ice cream years ago and the flavor is really addictive! The moment I made it again I remembered that salty yet sweet taste and fell in love with this refreshing treat all over again. If you are a fan of Kingdom Hearts, or just like to try new things, I hope you’ll enjoy this recipe!

Ingredients
6 servings
1 cupmilk
1 cupheavy whipping cream
2eggs
separated
0.33 CupSugar
+ 1/2 Tbs
½ tspvanilla
0.25 TspSea Salt
It’s important that you only use sea salt and not table salt

Instructions
Step 1
1. Separate the eggs with the whites in the mixing bowl and the yolks in the saucepan.
Step 2
2. Add the sugar, milk, and cream to the egg yolks. Whisk together then gently stir with a spatula on low heat. Continue until you get a slightly thickened and velvety texture, about 5 minutes. Set aside to cool.

3. Whisk the egg whites on medium speed for a few minutes, then add in the 1/2 tablespoon of sugar and continue whisking until you’ve reached soft peaks.
Step 4
4. Slowly add the custard mixture to the egg whites until fully incorporated.
Step 5
5. Add the vanilla and sea salt, tasting the salt amount after each addition until it’s to your liking. It should be slightly savory.
Step 6
6. At this point you can add the food coloring and mix thoroughly.
Step 7
7. If using an ice cream machine, pour in the mix according to machine instructions.
Step 8
8. If using a container or popsicle molds, pour in the mixture and tap out any excess air before freezing for at least 4-5 hours. (Personally, I still use the ice cream machine first even with popsicle molds to ensure a smooth texture).

You can use an ice cream machine, freeze in a sealed container, or pour the mix into popsicle molds.

The food coloring is optional as well, just make it however you’d like! The ratio is 3 blue to 1 green if you would like to add coloring.
