Forget boil-in-the-bag kippers. This Sicilian inspired healthy meal in a bag works really well with any fillet of fish and won't make your house smells like a 1950's B&B.

Ingredients
4 servings
300gquinoa
2 handfulscherry tomatoes
quartered
500mlchicken stock
hot, or vegetable
ground cinnamon
1lemon
basil
Small, stalks removed
4fillet salmon
or any other fish skinned and boned

Instructions
Step 1
Preheat your oven to 200°c/400°f/gas mark 6
Step 2
Put the quinoa into a pan with the tomatoes, stock, and a pinch of cinnamon. Bring to the boil and simmer for 10 minutes.
Step 3

To make each bag, take a large piece of kitchen foil (roughly the size of 2 A4 sheets) and fold in half. Fold over the 2 edges several times to make a little bag, leaving the top open. The place of a baking tray.
Step 4
Take the quinoa off the heat and cover with a lid till all the water is absorbed. Then finely grate the lemon zest into the quinoa and tear in the basil. Mix well and divide between the 4 bags.
Step 5
Chop the lemon into wedges
Step 6
Place a fillet of fish on top of each pile of quinoa mix, season with salt and pepper, then top with a lemon wedge and seal the bags up.
Step 7
Bake in the oven for 20 to 25 minutes, until the fish is opaque and cooked through. Serve with green veg or salad.
