Beef, mushroom and Guinness pie

Instructions

Step 1
Fry off the onions in a little olive oil
Step 2
Toss the beef in 2 tbl spoons of plain flour, add to the onions and brown
Step 3
Remove the beef and onions then add the Guinness to cooking pan, simmer for around 5 mins to burn off the alcohol and reduce down
Step 4
Return the beef and onions then add the stock, mushrooms, carrots and tomatoes and enough water the cover the beef.
Step 5
Simmer in a low heat for 2.5 hours till the beef is tender mean while prepare the pastry
Step 6
Sift flour and salt into bowl.
Step 7
Chop butter into pieces and rub into flour, until it resembles breadcrumbs, its ok to have lumps of fat
Step 8
Sprinkle the water over the crumbs.
Step 9
Mix to stiff crumbly looking mixture with a chilled knife.
Step 10
Draw together with fingertips, turn onto floured surface, roll into ball and use as required.
Step 11
Chilli for between 15 and 30 mins
Step 12
Return to room temperature for 30 mins before rolling and placing in the pie dish, return to the fridge in the pie dish and chill for a further 30 mins
Step 13
Bake at 200C for 8 mins with baking beans then 10 minutes without

Add the filling to the blind baked pastry

Cut the pastry edge and cover with a final sheet of pastry bake for 35 mins at 180
