Ingredients

Instructions
Edible Cookie Dough
Step 1
In sm. bowl, mix butter & sugars together. Add in vanilla & cream; mix again.
Step 2
Add in cooked & cooled flour and a pinch of salt; mix well. Fold in chocolate chips.
Step 3
Using about ¼ tsp, scoop out cookie dough; roll each scoop into sm. bite-sized balls. Place cookie dough balls on plate; chill in freezer while making cookies.
Preheat oven to 350°F
Step 4
Line lg. baking sheet with parchment paper; set aside.
Step 5
Using a paddle attachement, cream brown sugar & butter together (3 min.) until it is light & fluffy. Add egg & vanilla; mix until incorporated. Add flour, corn starch, baking powder, & salt; mix just until flour disappears.
Step 6
A lg. cookie scoop should yield 7 evenly-sized cookie dough balls; place on prepared baking sheet. Gently press down to about 1”-thickness.
Step 7
Bake (14 min.). Cool cookies on the baking sheet (10 min.); transfer to a cooling rack.
Ice Cream Frosting
Step 8
Cream butter until smooth using a whisk attachment of mixer. Add powdered sugar, vanilla, & vanilla ice cream; whip until smooth. (7 min.) med. should make it extra light & fluffy.
Step 9
Gently fold half of edible cookie dough balls in buttercream; frost each cookie. Top with rest of cookie dough bites. Decorate with more chocolate chips; enjoy!

If you don’t want to make cookie dough from scratch, you can purchase edible chocolate chip cookie dough from your local grocery store’s refrigerated section.
