Instructions
Step 1
First cut your creme eggs in half (using a hot knife might help) and put them in the freezer.
Step 2
Then melt your butter and dark chocolate together (better if it has more than 50% cocoa! I used dark choc with 70% cocoa) in the microwave and set aside.
Step 3
In a separate bowl, crack three eggs and add your sugar. Whisk with a hand whisk or electric whisk until pale and fluffy (a good 5 minutes).
Step 4
Using a spatula, fold in your melted chocolate and butter mixture.
Step 5
Next fold in sieved flour and cocoa powder gently until no flour pockets remain.
Step 6
Add your chopped milk and white chocolate and pour into a tray.
Step 7
Top with halved creme eggs and bake at 180C fan for 17-22 mins. I usually check them at 15 mins. Once the middle only has a slight wobble or a toothpick comes out with a few wet crumbs, they’re done.
Step 8
Before slicing refrigerate for a few hours or overnight for the perfect gooey texture.
Step 9
For neat slices, dip a sharp knife in hot water and wipe with a paper towel before slicing. Clean the knife between each cut.
