Instructions
Preheat oven to 350Β°F
Step 1
Line baking sheet with parchement paper; set it aside.
Step 2
Cream butter & sugars until combined. Add egg & vanilla; mix again.
Step 3
Add flour, graham cracker crumbs, salt, baking soda, & baking powder; mix just until flour mixture disappears.
Step 4
Using a lg. (ΒΌ cup) cookie scooper, scoop out 8 equally-sized cookie dough balls. Roll between palms of hands; roll them in the β
C of crushed graham crackers.
Step 5
Place cookie dough on prepared baking sheet, gently flatten to about ΒΎβ-thick.
Step 6
Bake (9-10 min.). Cool cookies on baking sheet (10 min.); transfer to cooling rack.
Graham Cracker Crumb Topping
Step 7
Mix graham cracker crumbs with sugar & melted butter. Let mixture cool down before topping cookies with it.
Cream Cheese Frosting
Step 8
In mixer, whip softened cream cheese & butter together until smooth.
Step 9
Add powdered sugar & vanilla; mix on high until light & fluffy (2-3 min.)
Step 10
Fill piping bag with lg. round tip with creamcheese frosting. Frost each cookie; top each cookie with a little bit of graham cracker mixture and enjoy!

Step 11

For Lemon Cheesecake, make a divot in frosting with a spoon & fill with lemon curd

To store, place in air-tight container (or a flat baking sheet wrapped with plastic wrap); store in fridge (up to 5 days.)
