Instructions
Step 1
In a cast iron skillet, heat oil in pan over medium heat until hot. Lay bacon in pan. Cook flipping occasionally until crispy. Reserve on a paper towel. Save bacon fat for later.
Step 2
Dice tomatoes into a small dice, shred mozzarella, slice basil and reserve for cooking.
Step 3
In the same cast iron pan, heat bacon fat over medium heat until hot. Season both sides of the pork with HV Ranch packet. Adjust amount to your liking.
Step 4
Place chops in hot bacon fat and sear on each side for 5-7 minutes until golden brown. Adjust heat when necessary!
Step 5
Put tomatoes in pan and place chops on top of tomatoes. Add stock or water and bring to a boil. Reduce heat to a slow simmer allowing only for slow bubbling.
Step 6
6. Add cream and let chops cook for 10-12 minutes depending on thickness. Flip chops every 3-4 minutes in sauce
Step 7
7. Once sauce has begun to slightly thicken, add bacon and mozzarella. Sauce should coat the chops at this point. Adjust seasoning if necessary.
Step 8
8. Garnish with sliced basil, cherry tomatoes, and a little extra shredded cheese. Serve HOT in skillet!
