Kosher salt is a type of coarse salt popular among professional chefs and home cooks alike. It’s primarily made from sodium chloride and doesn’t usually contain iodide or other additives like anti-clumping or anti-caking agents. Kosher salt is mined from salt deposits and has a larger flake than table salt. Its larger size is preferred for cooking because the flakes are easier to control when sprinkling over food so you’re less likely to oversalt. Kosher salt is often used for curing or smoking meat, pickling, brining and seasoning food during and after cooking. Contrary to its name, kosher salt isn’t necessarily kosher certified or considered to be “kosher.” So what makes salt kosher? It got its name because it was historically used for koshering meat, the Jewish process for preparing meat. The salt was preferred because the larger flakes drew out moisture faster. When it comes to kosher salt vs. table salt, the main difference is its size. Kosher salt is coarser whereas table salt is much finer. Table salt is also iodized which sometimes produces a bitter aftertaste, leading some to choose kosher salt for its pure flavor. Because table salt is so fine, it’s also easier to oversalt dishes. When cooking, using 1 tablespoon of table salt compared to 1 tablespoon of kosher salt can double the saltiness of the food. If you’re using table salt as a substitute to kosher salt, be sure to cut down on the amount of salt you use. However, the best substitute for kosher salt is another large flakey salt like pink himalayan salt or other sea salts. Similar to other salts, kosher salt is a good source of sodium which is essential to supporting nerve and muscle function and maintaining the body’s fluid balance. Although salt varieties differ in taste and texture, all are fairly similar in terms of their effects on health.
