🍓Cream Cheese Filling:
Step 1
In a bowl, beat cream cheese and vanilla. In another bowl whip the cream with an electric mixer until it forms into cream, peaks. Fold in the cream together with the cream cheese.
Cake
Step 2
Preheat oven to the ideal temperature 350F. Line with parchment paper and spray a 12X16 inch baking tray.
Step 3
In a small bowl whisk together the flour, baking powder and salt. Set aside.
Step 4
In a medium bowl add in the eggs, sugar and vanilla extract. Beat with an electric mixer until foamy. Add in the oil and blend. Gradually add flour mixture.
Step 5
Pour the batter into the prepared baking tray and spread evenly into the corners using the back of a spatula.
Step 6
Bake for 13-15 minutes or until done. Take a kitchen towel and generously sprinkle with powdered sugar. This helps the cake not stick to the towel.
Step 7
Flip the cake over into the towel. Remove the parchment paper and dust this side of the cake with powdered sugar.
Step 8
Gently roll the cake up. You will have to do it while it's hot otherwise it cracks. Set aside, and allow to cool completely. Unroll the cake and spread the strawberry filling (room temperature) evenly over the cake.
Step 9
Spread the cream cheese filling on top of the strawberry filling. Roll the cake back up. Refrigerate for at least 1 hour before serving. Sprinkle with powdered sugar before serving and decorate with fresh strawberries.
