white or cremini recommended

4 cupschicken broth

6 ozchicken breast
diced or cut into bite-sized pieces

1 teaspoonfish sauce

1 teaspoonworcestershire sauce

1 teaspoonlemongrass paste
or 1-2 stalks lemongrass, optional

1 cuphalf and half cream
10%, or use 1 cup more coconut milk instead

½ cupcoconut milk can
or if using a large can stir coconut milk first, then measure out

2 teaspoonsred curry paste

1 teaspoonSambal Oelek chili paste
or Asian Garlic Chili Paste/Sriracha

3 tablespoonstomato paste

1 tablespooncornstarch

0.5juice of lime

¼ cupfresh cilantro
chopped

salt

freshly ground pepper

2 cupsrice
cooked, long grain white, basmati or brown rice or try a mix of long grain with wild rice for some added texture

fresh cilantro
Additional, parsley or basil, chopped
