1 poundground chicken
or turkey, I used chicken

1 tablespoonground chili powder

1 teaspoonground cumin

1 teaspoongarlic powder

½ teaspoonkosher salt

¼ teaspoonground black pepper

1can fire-roasted diced tomatoes
with juices

1 ½ cupsbrown rice
cooked, quinoa or cauliflower rice

1 ¼ cupshredded cheese
Monterey Jack, pepper jack, cheddar, or similar cheese, divided, I used a mix

avocado
sliced

fresh cilantro
chopped, optional for serving

salsa

Sour cream
or plain Greek yogurt

lime juice
freshly squeezed
