Ingredients
4 servings
1 packageteriyaki & pineapple chicken meatballs
pre-cooked
2 cupscarrots
julienned
1red bell pepper
thinly sliced
4 cupsrice
cooked
1 bunchfresh cilantro
sriracha hot sauce
optional
2 headsbutter lettuce
⅓ cuppeanut butter
2 Tbspsoy sauce
1 Tbsprice wine vinegar
2 Tbspagave syrup
or sweetner of choice
2 Tbsplime juice
2 tspchili garlic sauce
or sriracha hot sauce
4 Tbspwater
Add additional 1 tbsp at a time until you reach desired consistency
Instructions
Step 1
Heat meatballs according to package instructions.
Step 2
Chop carrots and bell peppers and place on a small plate or tray.
Step 3
In a small bowl, mix together all ingredients for the Thai peanut sauce. Set aside.
Step 4
Add about spoonful of cooked rice to a leaf of butter lettuce. Top with a meatball, carrots, bell pepper, and desired amount of cilantro. Drizzle with peanut sauce and sriracha and enjoy!
