Ingredients

4 cuplong grain basmati rice
½ cupoil
2onion
diced
2 cupmix bell peppers
diced
3tomatoes
finely chopped
8garlic cloves
finely chopped
2 cupchicken stock
4 cupwater
Seasoning
Instructions
Step 1
Wash and soak rice for 45 mins
Step 2
Heat a big pot then add oil
Step 3
Once oil is hot add onions
Step 4
Saute onions on medium high heat until soft and then add garlic
Step 5
When onions turn golden brown add the bell pepper
Step 6
Mix and cook bell peppers two minutes then add the seasoning
Step 7
Put on low heat and cook spices for about two minutes, mix well
Step 8
Add tomatoes and mix again
Step 9
Once mixed cover with lid for three to four mins until tomatoes have softened

Uncover and mix, put on medium

Add the uncooked rice that you've soaked and drained

Mix thoroughly and combine gently, making sure not to break the rice

After about two mins add chicken stock to two cups boiling water then add to rice

Add 4 cups of boiling water

Gently stir and mix well

Turn to high heat and wait until most of the water is absorbed, leaving just a little bit on top. Mix gently when you see oil on top.

Cover with lid and put on low heat for 15 mins.

After 15 mins, turn off the heat and let it stand for 10 mins

Open lid and gently fluff the rice before serving.
