½ cupchopped onion

1 ½ cupsbaby spinach leaves

loosely measured, then chopped

6 slicesbacon

or turkey bacon, cooked and crumbled

1 ¼ cupsshredded cheese

Swiss, mozzarella cheese, cheddar or Monterrey jack

9 inch homemade, fitted in a 9'' glass pie plate

Special occasion

Family ate the lot and loved it! Used a commercial flakey puff-pastry crust. Be careful not to over-wet the filling mixture, or it may not set firmly enough to cut. I had to nuke my pie 3x 40 seconds, after I over-spilt the cream measure in my haste.

Used Jarlsberg for the cheese of choice. It was fantastic and definitely a make again.
