Date Syrup Glazed Carrots with Garlicky Lemon Tahini Sauce

Instructions

Step 1
Start by preheating your oven to 400°F and lining a baking sheet with parchment paper or baking mats.
Step 2
If you're using carrots with stems cut them off about a half inch from the tops. I like to keep a bit on for aesthetic purposes. You could also cut them into inch pieces or half them lengthwise. Totally up to you.
Step 3
Place the carrots onto your prepared baking pan and set aside.
Step 4
In a small bowl mix together olive oil, date syrup, and salt and pepper. Pour over carrots in the pan and toss.
Step 5
Bake for 30-35 minutes until tender. If you're cutting your carrots into smaller 1 inch pieces bake for around 18-20 minutes.
Step 6
While your carrots are baking make the Garlicky Lemon Tahini Sauce! Mix together tahini, lemon juice, salt and pepper and diced garlic. Mix until creamy and smooth and set aside.
Step 7
Once your carrots are tender plate on a serving platter and drizzle tahini sauce over warm carrots. Serve immediately!
Step 8
These carrots can also be prepped one day in advance. Simply prep/roast carrots as instructed above and warm in the oven for 8 minutes at 350 before serving. The sauce can be prepped and stored in the fridge in advance as well. I also love using this garlic lemon tahini for salads, and as a dipping sauce for potatoes or chicken!
