Step 1
Preheat oven to 400 degrees

Line a large baking sheet with parchment paper or aluminum foil**, making sure to cover entire bottom and sides of pan

Evenly layer crackers across the pan

Place butter and brown sugar in a large saucepan. Turn to medium heat and stir frequently until the butter melts

Cook for another 3-5 minutes until mixture comes to a boil, continuing to stir often. Allow to boil for just 30 seconds, then remove from heat

Pour the caramel mixture over the crackers and spread evenly

Bake for 5 minutes

Place white chocolate chips in a microwave safe bowl. Microwave for 120-150 seconds, stirring every 30 seconds, until fully melted

Pour chocolate over crackers and spread evenly. Immediately top with rainbow sprinkles

Let cool to room temperature, then place baking sheet in refrigerator to chill for at least 4 hours (ideally overnight)
Step 11
Once chilled, peel the parchment paper off bottom of crackers. Use a knife or hands to break into 2-3 inch pieces of candy bark

Keep stored in an airtight container in the refrigerator for up to a week
