Spinach and Artichoke Chicken

Added onion and garlic But loved it

We used some spinach artichoke dip that we already had on hand. We did not salt the chicken. It was very good!

Subbed Greek yogurt for sour cream. Added diced red pepper with the onion. Used Italian cheese blend instead of mozzarella. Did not thin the chicken breast so took closer to 1 hour cook time.

I used boneless chicken thighs instead of breasts. It was good. I'm not sure I would make it again anytime soon but this would make a great filling for a Chicken Lasagna or a Vegetarian Lasagna if you left out the chicken.

Hubby liked it alot, kids thought it was bland

Takes a little prep work but definitely worth it! Pretty easy basically
