I used smoked paprika for seasoning and it was delicious!

Add chopped celery and shoestring carrots. Ham is a delicious alternative to bacon.

Best soup ever! This time, I didn’t blend anything— just added half a cup of instant potato flakes- it was perfect!

Added carrots for extra flavor. Used an immersion blender and blended the whole pot. Added salt to taste after blending. I didn't have anchor chili powder unfortunately. I added chili powder, paprika, Italian seasoning, and onion powder. I added more bacon.

Love this soup. I've made it twice now. This time around I only had beef stock and it was still very yummy! I also added more garlic and mixed in cheese into the actual soup + used some for topping. Great for the cold dreary Jan weather in New England

I ended up adding more bacon to it but it turned out really good

Made it into a Hatch Green Chili Potato Soup. Added 3 - 7oz cans of diced hatch green chilis - added to cooking with onions. Replaced the ancho chili powder with green chili powder and added a dash of cayenne and a little cumin.

It turned out great. Be careful not to puree too much. Everyone loved the flavor though.

It was really good!! Made great leftovers too!

Made some tomatillo cream salsa to put on top, and the bitterness/acidity went perfectly with it 💕

I’d pay money for this in a restaurant. Only change I made was to add one stalk celery and double the chili powder. PHENOMENAL

I added the bacon that it called for. Definitely needs more than just 6 pieces. Other than that, it's a great soup.

The whole family LOVES this recipe. I skip the first step and add the bacon as a topping. I find it gives the soup a less smokey flavour but still has the yummy crunchy bacon.

I did 1lb of bacon, and it was still great, but I would do 2lbs instead.

I used gold potatoes, fresh garlic and skipped the blender. It wasn't thick but still amazing flavor with bacon, sour cream & cheddar on top.

Loved it. Didn’t have sour or heavy cream, subbed extra cup of broth no prob, added garam masala & dill, & lemon juice at the end. YUMMY but took an hour not 30m

Made in the Instant pot. I suatee'd the ingredients in the instant pot before adding all other ingredients. Then I pressure cooked it all for 5 minutes and fast released to add the sour cream. Then I stirred it all once more and put it on the soup function, and let it simmer for about 10 more minutes while stirring to keep anything from burning at the bottom. It turned out great! I also used part beef broth because i ran out of chicken broth, and it still tasted amazing. As an avid potato soup LOVER, this is a fantastic recipe!

I substituted the ancho chili powder for old bay seasoning because my family can't have spicy things. I added hot sauce in my soup. It was absolutely delicious 😋

Made it with left over mashed potatoes so I added them after the broth came to a simmer. Very rich and creamy. Will definitely make again.

This was so good. It was all gone. Make sure you prep your meat and veggies before, though.

The cream separated a little bit from cooking at too high a temp. That's probably a me problem, not a recipe problem. It still tastes really yummy and will make again

1. Place bacon pieces in a large Dutch Oven or soup pot over medium heat and cook until bacon is crisp and browned. Remove bacon pieces and set aside, leaving the fat in the pot. 2. Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes). 3. Add garlic and cook until fragrant (about 30 seconds). 4. Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed). 5. Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir well. Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes). 6. Reduce heat to simmer and remove approximately half*** of the soup to a blender (be careful, it will be hot!) and puree until smooth (half is about 5 cups of soup, but just eyeballing the amount will be fine. Alternatively you can use an immersion blender.). 7. Return the pureed soup to the pot and add sour cream and reserved bacon pieces, stir well. 8. Allow soup to simmer for 15 minutes before serving. 9. Top with additional sour cream, bacon, cheddar cheese, or chives. Enjoy

Very tasty, great with fresh cracked pepper. Half recipe is perfect for two people with some leftover

This is super easy and fun to make! Delicious as is, but very versatile! Prepare your ingredients and it takes no time at all!

Best I MEAN BEST potatoes soup ever!! I suggest you make this straight away. I had all of the ingredients in my house. I think you can use any type of potato I its definitely better If you use the right ingredients👍👍

Added a bit more garlic but it was delicious!

Cooked this in my instantpot. Used shallots and garlic for the aromatics and added carrots, celery, white pepper, and parsley. Also added some diced hatch chiles. Used green onions, diced jalapeños, and paprika for garnish, along with the bacon. Ditched the cheese and sour cream.

Loved this, makes a large amount and tastes great. I used regular chilli and added abit of paprika to it and sprinkled croutons at the end for some texture. Will make again.

Used instant soup mix, added mini potatoes 🥔, sour cream, bacon bits, fresh Parmesan and shredded cheeses 🧀 chives, sautéed onions in garlic butter 🧈

Stopped after puréeing it, and just added toppings to each bowl. Substituted plain Greek yogurt for the sour cream (as I do with most recipes). It was gobbled up by all who had some! If your craving potato soup, this is a solid recipe.

While boiling the potatoes, covered and stirred every 2min to prevent onions from burning. Used electric mixer instead of food processer/immersion blender.

I had all the toppings, not including bacon since it was all mixed in. But was really delicious!

Added 3 Leeks and 5 carrots. Sautéed in the bacon fat with 6 cloves of garlic, after soft remove veggie mix. Deglazed Instant Pot with 1/2 C chicken broth. Added 3.5 Lbs of taters put veggie mix on top added 2 C chicken broth/stock and pressure cooked on high for 15 minutes. Let sit for 5 minutes. Added 4cups more Chicken Broth, added seasonings and immersion blended. Sautée on high 15 minutes and served. Delicious

This was really good potato soup! I added a little extra garlic because I am a garlic fiend. No vampires happening over here. My husband loved it and he doesn’t like potato soup! Two thumbs up!

It takes much longer to make than the recipe suggests. Took about 1.5 hours total.

I added yesterday's left over garlic mashed potatoes and it made it a more hearty soup, everyone loved it

Love this recipe! My family does not anything really salty so I used no sodium stock & left out the bacon bits, but did use the bacon grease for the onion & garlic. I did add an extra Tbsp of onion, garlic powder, & pink Himalayan salt. I also mixed in cheddar cheese until melted prior to serving. My family LOVES it!!!

Instead of 6 slice's of bacon I used diced ham, one pack. A little extra seasoning than what it called for. Was good will make again.

This is a great base recipe and I will be making this frequently. I'll put a bit more salt in next time, or I might use my salt/msg mix. I think another strip of bacon will give it more flavor as well.

Add extra bacon, Extra Butter after adding flour After cooking is complete add onion powder and garlic powder. If chives not on hand dill is great.
