The Best Ground Beef Enchiladas

Tip: don't use extra thin corn tortillas for your enchiladas 😂😂😂 I put maybe 2 tablespoons max in each one, they're just too delicate lol. That being said, I used this recipe more for how to assemble and how long to bake, as I made my own ground pork and chorizo Al Pastor filling. Still delicious! Just needs a thicker tortilla!
