Flourless Chocolate Cake

This cake turned out fantastic, and was a great dessert solution for me (celiac) and my husband (dairy free). I was nervous that the olive oil would be too strong in the dessert, but it was not. We served it with coconut whipped cream and chopped red cherries on top. Very rich so you'll probably have leftovers. Made the night before to serve on valentines and that was the right move for sure.

Can be made in 8 or 9" round tin - see the notes preceeding the recipe for timings. This is the basic recipe. You can add a coffee note but make sure you use espresso powder.
