Instructions
Step 1
In a large saute pan or saucepan over medium heat, add the Thai green curry paste and half of the coconut milk.
Step 2
Once this mixture has come to a simmer, add the brown sugar, vegetables and remaining coconut milk.
Step 3
Simmer this mixture until the vegetables have slightly softened, then add the shrimp. Continue to cook until the shrimp is cooked through (it should appear pink with no translucent parts).
Step 4
Once your shrimp is cooked, turn off the heat and add the jalapenos, Thai basil and lime juice. Plate and serve with a side of jasmine rice, if desired.
