Instructions
Step 1
In a small nonstick pan heat up oil on medium heat and add black bean paste. Cook for 3-4 minutes stirring consistently. Black bean paste will start bubbling and be more fragrant.
Step 2
In large pan pour oil that separated from the black bean paste and heat up to medium high. Season pork with salt and fry in oil for 5 minutes until brown around the edges.
Step 3
Next add cabbage, zucchini, onions and green onions. Cook and gently mix around until veggies wilt down about 5 minutes. Then add black bean past and 2 cups of water. While it's simmering make a slurry with cornstarch and ¼ cup of water. Pour in slurry and mix around, add sesame oil, sugar and soy sauce. Simmer for another 5 minute or until sauce thickens enough to coat a spoon.
Step 4
In medium pot boil noodles. Follow cooking instructions on packaging.
Step 5
Drain and rinse with cold water.
Step 6
Serve noodles with black bean sauce and top with cucumber.
