diced, alternatively use cooking chorizo, or a combination of both

1onion
finely diced

2leeks
white and pale green parts only, sliced, rinsed and well drained

5garlic cloves
skin on and left whole
3whole plum tomatoes from a tin
drained of juice

½ tspsweet paprika
to taste

300gpaella rice
Spanish, risotto rice will do

600mlchicken stock
hot, or boiling water

flat-leaf parsley
small, chopped

salt
optional

400gtin chickpeas
drained and rinsed

lemon wedges
to serve
