Ingredients
6 servings

2 poundschicken breasts
butterflied and cut into cutlets

1 ⅓ cupstortilla chips
finely crushed

1egg
large, beaten with 1 tablespoon water

¼ cupall purpose flour
or gluten free all purpose flour

¼ teaspoonsalt

⅛ teaspoonpepper

4 ouncecream cheese
softened

3 teaspoonshot sauce
such as, Red Hot Sauce, more for spicier

1celery stalks
diced

½ cupblue cheese crumbles

1 cupColby jack cheese
freshly grated, or cheddar
Instructions
Step 1
Preheat the oven to 375º F and spray a baking sheet with cooking spray. In three separate shallow bowls place flour mixed with salt and pepper, beaten egg mixed with 1 tbsp. water, and crushed chips.
Step 2
Dredge both sides of chicken in flour, then dip completely in egg mixture, and finally press down into tortillas to coat both sides. Place chicken on baking sheet and repeat with rest of chicken. Spray top of chicken with more cooking spray. Bake for 15-18 minutes, or until the chicken reaches a temperature of 165°F.
Step 3
While chicken is baking mix together cream cheese, hot sauce, blue cheese, and celery.
Step 4
Remove from the oven and preheat the broiler. Dollop the cream cheese mixture over the top of each piece of chicken. Sprinkle the cheese over the top. Broil until topping is hot and bubbly, about 2-3 minutes.
Step 5
Serve with additional hot sauce and ranch or blue cheese dressing.
