Pineapple upside-down cake

Lovely cake. Easy to make. Just not my thing

I added jus a bit more pinnapple to the sides

Added a couple of table spoons of desiccated coconut

Doubled the recipe and made it into a traybake version. I then cut into individual portions and glazed with agave and rum. Absolutely divine!

Easy to make. The sponge is almost like syrup sponge, delicious.

Fresh out the oven, I always love to eat this one warm 👌
