Ingredients: ½ white cabbage, finely sliced; ¼ red cabbage, finely sliced; 1 red onion, finely sliced; 1 large carrot, grated; 1 red pepper, diced; 2 spring onions, roughly chopped; 2 tablespoons of Gran Luchito Chipotle Paste; 4 tablespoons of Mayo; 3 tablespoons apple cider vinegar; 2 tablespoons extra virgin olive oil; 1 tablespoon Gran Luchito Spicy Taco Seasononing; 1 handful of fresh coriander roughly chopped; Salt and freshly ground black pepper

Is there anything a side of delicious Mexican coleslaw can’t improve? Add a generous amount of this crisp cabbage Mexican slaw recipe to your tacos and you’re on to a winner. A much more flavourful recipe than traditional coleslaw, we simply dress our slaw with a bit of extra chipotle smokiness by making a homemade chipotle Mayo with Chipotle Paste and a bit of our Spicy Taco Seasoning. Add vinegar and extra virgin olive oil and then simply season with salt and freshly ground black pepper.
