This Peanut Coconut Chicken Curry is deliciously mild. LOVE the coconut milk w/ the faintness of peanut butter. My 9yo son said it's the most tasty chicken- and so moist. He even ate the cilantro!
I used leftover tri-coloured quinoa, cashews instead for crunch, and broccoli because that's all I had.
So versatile and bright w/ a squeeze of lime! So cozy on a weeknight in.
I made this one in the Instant Pot. Came together so quickly with the prep already done!
