Almond Flour Blondies

5 steps
Prep:5minCook:22min
The best almond flour blondies recipe makes a thick, soft and chewy blonde brownies dotted with gobs of gooey melted chocolate. With a classic blondie taste, no one will realize this dessert is actually grain-free, gluten-free, with an easy dairy-free option!

Instructions

Step 1
Preheat the oven to 350ºF. Grease a 8X8-inch baking pan with nonstick cooking spray or line with an oversized piece of parchment paper to lift blondies out of pan after cooling.
Step 2
In a medium bowl whisk together the melted butter, brown sugar, sugar, egg, egg yolk, and vanilla.
Step 3
Stir in the almond flour, salt, baking soda, and half the chocolate chips (I stir in the miniature chips so they don't sink to the bottom of the pan), and optional nuts (these may also be sprinkled on top).
Step 4
Spread in the prepared pan and sprinkle on remaining chocolate chips and/or nuts. Bake for 22-24 minutes, or until edges are golden brown and center is set. Cool for 15 minutes before slicing and serving.
