Ingredients

2 cupsGolden Oreos
fine crumbs
6 Tbspbutter
melted
3 cupsfresh strawberries
washed & sliced in halves/quarters
1 Tbspcornstarch
⅓ cupwhite sugar
1 Tbsplemon juice
½ Tbspwater
16 ozcream cheese
softened
¼ cupsour cream
room temperature
2 Tbspheavy cream
room temperature
1 Tbspvanilla
2eggs
room temperature

Instructions
For the Base
Step 1
Process Golden Oreos into fine crumbs. Add to a small bowl along with melted butter and mix until the crumbs are fully coated.
Step 2
Transfer into a lined 8x8 inch square pan and press down to compact using a flat surface.
Strawberry Sauce
Step 3
Cut strawberries into quarters. Pour strawberries into a saucepan over medium heat. If using frozen berries, thaw first and drain the liquid before adding into the saucepan. Add lemon juice, sugar, water, and cornstarch. Mix.
Step 4
Cook for 8-10 minutes. Make sure to stir while it simmers every few minutes. The sauce will be ready once the strawberries have shrunk and the mixture has thickened. Do not keep on the heat for longer than 10 minutes.
Step 5
Remove from heat and allow to cool completely. As it thicken as it cools.
For the Cheesecake
Step 6
In a stand mixer with a paddle attachment, mix the cream cheese on high for 2 minutes. Add in the white sugar and continue beating for another 1-2 minutes.
Step 7
Add in the sour cream, heavy cream, and vanilla. Lower to a medium speed and continue mixing until everything is smooth. Scrape the bowl when needed.
Step 8
Keeping the mixer on low, add in one egg. Allow it to mix in and then add the second egg.
Step 9
Pour the cheesecake batter onto the crust. Bake at 325°F for 45-50 minutes. The cheesecake is done when the outside is a light golden brown colour.
Step 10
Pop the oven door open slightly and allow all the hot air to escape before removing from the oven and placing on the counter.
Step 11
Once the strawberry sauce is at room temperature, pour on top of the cheesecake and spread evenly. Allow the cheesecake to get to room temperature before placing in the fridge to chill overnight. Slice, add extra Oreo pieces on top, and enjoy! Keep cold.
