Spinach Pinwheels

Made for Super Bowl. Big hit. The carmelized onions really add a dimension that make these stand out. I used 12 oz package of frozen spinach that I cooked in microwave, drained and cooled. Used 1/3 less fat cream cheese. Each roll made 20. I did not use an egg wash because eggs are precious. Still baked up and browned nicely.
