How to make Roasted Garlic Butter

Step 1
Preheat your oven to 400°F (204°C). Take 1½ sticks of salted butter out of the fridge and let it soften at room temperature.
Step 2
Cut off the top ¼ inch of each head of garlic to expose the cloves. Place the garlic heads, cut side up, on a baking sheet lined with aluminum foil.
Step 3
Drizzle each head of garlic with 1 tsp of olive oil. Evenly sprinkle ¼ tsp of salt and ¼ tsp of pepper over 4 heads of garlics.
Step 4
Cover the garlics with aluminum foil. Bake at 400°F (204°C) for 40 minutes, or until the cloves are tender and caramelized.
Step 5
Remove the garlics from the oven, carefully open the foil, and let the garlics cool for 5 minutes. Once they are not too hot to touch, squeeze the roasted garlic cloves to a bowl.
Step 6
Add softened butter, chopped parsley, paprika, and parmesan cheese (optional) to the roasted garlic cloves, mash with a fork until all the ingredients are well combined.
Step 7
You can simply spread this roasted garlic butter on bread for a tasty and easy snack. Or you can use it to make a pull-apart garlic cheese bread (See steps below). Save any leftover in a small airtight container. It can be stored in the refrigerator for up to a week.

How to make pull-apart garlic cheese bread

Step 8
Preheat your oven to 375°F (190°C).
Step 9
Using a serrated knife, to vertically slice a bread of your choice into halves. (You can use a sourdough bread, white miche bread, ciabatta, baguette, or toast. I used a black pepper focaccia from Panera.) Make diagonal cuts in both slices of the bread, about 1 inch apart, to create a grid pattern on the bread. Be careful not to cut all the way through the bread.
Step 10
Place the bottom half of the bread, cut side up, on a baking sheet lined with aluminum foil. Brush a layer of thousand island dressing or mayonnaise over the bread, add a layer of mozzarella cheese, cover with the top half of the bread.
Step 11
Spread a generous layer of homemade roasted garlic butter onto the bread's top surface. Optionally, sprinkle a thin layer of shredded mozzarella cheese and some freshly chopped parsley on the top.
Step 12
Bake at 375°F (190°C) for 10. Remove from the oven, enjoy hot.
