20rice paper
0.5red bell pepper
julienned
0.5yellow pepper
julienned
3carrots
peeled and julienned
3mini cucumbers
julienned
1 bunchmint
chopped
¼ cupred cabbage
chopped
¾ cupbean sprouts
1 packagerice noodles
1 cuppeanut butter
4 tablespoonsoy sauce
1 teaspoonlemon
1 teaspoonsugar
1 ½ tablespoonsriracha hot sauce
½ cupwater

Instructions
To prep the noodles:
Step 1
Cook the rice noodles according to the instructions on the packaging.
Step 2
Strain the noodles.
To prep the vegetables and herbs:
Step 3
Julienne the carrots, red bell peppers, cucumbers.
Step 4
Remove the stems from the mint. Roughly chop.
Step 5
Roughly chop the red cabbage.
To make the peanut dipping sauce:
Step 6
Whisk together peanut butter, soy sauce, lime juice, sugar, sriracha, and hot water until smooth and creamy.
To wrap your spring rolls:
Step 7
Take your prepped noodles, vegetables, and herbs and organize your work surface.
Step 8
Fill a shallow bowl or pie pan with warmwater. Put a spring roll wrapper into the warm water. Make sure it's submerged, gently flip it over, wait a few moments, and then remove it.
Step 9
Place your wrapper onto a clean, flat surface.Place small portions of the vegetables, herbs, and noodles, onto the wrapper.Then, roll the wrapper up like a burrito.
Step 10
Repeat the wrapping process, one by one, until complete.
Step 11
Serve immediately and enjoy!
