Instructions
Step 1
Clean and boil eggplant in water for about 30 minutes until completely soft (use chopsticks to separate the eggplant to check if they get soft inside), remove eggplant from the pot to drain and cool down
Step 2
Mix diced garlic, ginger and chilies, chopped scallion, light soy sauce, dark vinegar, sugar, sesame oil, chicken powder, Szechuan peppercorn powder and hot water from the pot, whisk well.
Step 3
Serve eggplant warm or cold with the dipping sauce on the side, enjoy!
