Ingredients
6 servings
1 ½ cupwhole milk
you can use dairy free milk, nut milk, whatever milk you prefer
½ cuppumpkin puree
⅓ cupagave nectar
honey or maple syrup also works
2eggs
1 teaspoonvanilla extract
1 cupsgluten free rolled oats
2 teaspoonspumpkin pie spice
1 teaspoonbaking powder
1 teaspoonsalt
¾ cupwalnuts
chopped, chopped pecans would also be fun
Instructions
Step 1
Preheat oven to 350F.
Step 2
In a large bowl, whisk together the milk, pumpkin puree, agave nectar, eggs, and vanilla.
Step 3
Add the oats, pumpkin pie spice, baking powder, and salt to the bowl and whisk to combine.
Step 4
Fold in the chopped walnuts.
Step 5
Spray an 8×8 square baking dish with your favorite cooking spray and transfer the oatmeal mixture to the dish.
Step 6
Bake for 35 minutes.
Step 7
Cut into 6 large rectangles and enjoy!
