Mexican Street Corn Chicken

Not only did my husband love it, I shared the leftovers with my coworkers. They loved it so much they told friends and family about. I have never cooked something that people liked so much. Thanks for making me look good.

Added extra seasonings and it turned out great

It definitely didn't taste like an elote but it was still really good regardless. And my 2 year old loved it!!!

Added cherry tomatoes and jalapeños on top.

Hi all, I didn't have all the ingredients on-hand so I made it work with a few minor adjustments. 1) I omitted cilantro, because I didn't have any. 2) I substituted feta cheese for the one the recipe said. 3) I substituted canned chicken breast (I heated it up with the corn). 4) The flavor was a little bland, so I doubled the amount of each seasoning. 5) I like a little more spice/heat so I measured that with my heart. This recipe turned out amazing. You can eat alone or with tortilla chips as a great dip! I will definitely be making this again.

Very easy to make and turned out delicious! I never measure my seasonings so I just put the amount I felt like putting in there and i didn’t have the issue people were having with it being bland. I did add adobo to the chicken before adding the corn mixture, but other than that I used only the seasonings in the recipe. I will definitely be making this more often

Excellent! Shucked 2 large ears of fresh corn + boiled + drained | Cut kernels + mixed with avocado mayo + Greek yogurt + 2 fresh jalapenos + spices | Omitted chicken + cheese

Very good. Added more spices than called for but I always do. Cooked at 375 for 45 minutes. Easy dish and great flavor.

I added a little more seasonings-cumin, chili lime seasoning . I agree with some of the reviews. It would need more seasoning to keep it from being bland. I also added a touch of corn starch (could have used more) so it wouldn't have as much liquid. All the flavors complimented each other. Especially the cilantro. I would make it again. it's an easy recipe. If I do, I will try seasoning and the chicken first to have a little less liquid and added flavor

It was very good I did add other spices along with everything in the recipe and I did dice my chicken cause it wasn't thawed all the way. Will definitely make it again.

My husband and I both enjoyed it and it was super easy to throw together and get some stuff done while it cooked!

Admittedly, I'm not the greatest cook, thus trying to branch out and cook things from here. Not sure if I need to go down to 1 lb of chicken breast or try to move to something bigger than a casserole dish, but I had so much chicken that I had to layer it in the dish. The first bite I tried of the chicken from the top layer tasted not cooked. The layer along the dish tasted fantastic. I will definitely try this again, but something different needs to be done. I threw away half of the chicken.

First recipe

I took the suggestion of another comment here and cut up the chicken breasts and sautéed them before putting them in the oven with the sauce on and it was so good! I served it over rice and it’s definitely a new favorite.

It is super yummy. Made it 2 times first i followed the recipe, 2nd i was in a hurry, so i cut the chicken in to chuncks so it would cook faster, and browned it. Then i threw the corn in the hot pan and stired it. Threw it in the oven, and baked it for 10 min. Still super yummy!

I added Japanese shishito peppers to the corn mixture and added more salt. The taste was phenomenal!

It was good but could have used more flavor. I didn't put the spicy stuff in it because we were feeding kids but maybe finding some other ways to add flavor would make it great.

Super easy to make and very good. We didn't need to make any changes in the recipe, it was super convenient to make. The picture is not accurate though lol.

Chicken was super moist, but could increase the spices a bit more.

I eyeballed the spices and didn't put nearly enough in, but it was a good first try! My toddler helped stir the mix.

Mayo and sour cream cooked wasn’t very good. We love to eat corn on the con with the elote but we didn't like this one. We will continue to eat Mexican corn on the cob, but not this chicken deal.

Meal was okay; not great, but not awful either. I felt it was a little bland for my liking. Cooking the chicken in with the corn mixture does make it quite watery and does change the texture and taste of the chicken. If I made again, I would probably marinate the chicken and then cook it separately (as another reviewer suggested). I'd probably mix in the queso fresco into the corn mixture before cooking it and then just serve the two together on the same plate, instead of cooking together.

The dish ended up with too much water so the chicken was more boiled than baked. I’d redo this by pre-cooking the chicken, or even marinating the chicken or something, but otherwise it was good
