Step 1
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper
Step 2
If making flax eggs, combine ground flax meal + 4 tbsp warm water in a small bowl and let sit for 5 minutes
Step 3
In a large bowl, mix together the almond flour, baking powder and salt
Step 4
In a separate bowl whisk together the coconut oil or butter, monk fruit sweetener, vanilla and (flax) egg
Step 5
Add wet ingredients to dry ingredients, then fold in chocolate chips
Step 6
Chill dough for 10 minutes in the refrigerator
Step 7
Form dough in 12 balls and press down into discs
Step 8
Bake for 10-12 minutes and transfer to cooling rack
