Fried rice fritters recipe

Most kids love fried rice, so this fritter version is a great option for a light lunch, dinner or lunch box snack. Made using veggies, leftover or microwave rice and a few simple pantry ingredients, they can be whipped up the night before and popped into lunch boxes in the morning rush! Don't forget the dipping sauce for a little treat! We have made ours with bacon, but this can easily be omitted for a vegetarian version.
