Carrot Cake Muffins

The oil is too prominent. I'd use butter instead ... also, I would use less oil anyway. The taste was good otherwise and I won't be ditching this recipe, just fixing the oil, which brought it down. I used olive oil so the taste was partially due to that but it also was a bit greasy anyway.

Easy recipe, feels like a lot of sugar but actually works out well. I overfilled my cases and they flowed over a bit, but still delicious. Took about 25 minutes in my oven

Used olive oil, half of the sugar and added walnuts.

Yummy, gone in a day!

They were good muffins. I would definitely make them again. My flatmate likes them; they are a good way to use extra carrots.

Made with half the amount of sugar in the recipe,. and we still felt it was sweet enough (while being healthier too).

A sweet treat even when using less sugar than called for. Sub the seed oil for a less toxic alternative.
