Fried Shrimp Paste Sambal

Notes, Tips & Tricks Attention : HOT & SPICY!! This relish is made for Chilli Fans who are keen of spicy Indonesian Sambal & doesn't bother with the smell of dried shrimp paste or Terasi ;-). This is one of my favorite sambal among others. Serve with fried tempe, tahu or fried chicken, sliced cucumber or any vegetable salad that you have in a fridge ...hmm what an delicious temptation ha ha... Last but not least, thx & credits goes to Eka Dianawati who introduced this delicious sambal many years back. Ingredients Ingredients : 3 large red chillies,, chopped 5 small red chillies / bird chillies 3 shalllots 1 clove garlic 1 tsp roasted / fried dried shrimp paste/terasi 1 mid-size tomatoes, halved 1/2 tsp sugar or palm sugar salt to taste 3 tbsp oil to fry Step-by-Step Instructions: 1 Heat 3 tbsp oil in a wok or saucepan over medium heat. 2 Fry chili, shallot, garlic & tomato till just soften. (Do not fry the chili too long otherwise they will be too hard to grind). 3 Transfer all fried ingredients onto grinding stone (or mortar & pestle) and grind until smooth. 4 Add the dried shrimp paste, pound it together to mix. Add salt & sugar to taste. Stir to mix. 5Serve right away with rice, bruised fried tempe or tahu and raw vegetables/lettuce.
