It's a simple but iconic cheese sauce. While this recipe is typically served with long cuts of pasta, such as fettuccine, short cuts work just as well. The flour is only used to thicken the sauce; if you are gluten-free, you can instead simmer the sauce (low heat) to gradually evaporate some moisture. Alternatively, arrowroot can be used. It is a well-known gluten-free thickening agent.
